Gingerbread Men
Remember to refrigerate the dough in order to make this recipe an easy Christmas cookie tradition.

Ingredients:
- 2 1/4 cups Flour
- 1/2 cup Sugar
- 1/2 cup Shortening (solid Crisco)
- 1/2 cup Light Molasses
- 1 1/2 tsp Korintje Cinnamon
- 1 tsp Baking Powder
- 1 tsp Ginger Powder
- 1 tsp Ground Cloves
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 Egg
Instructions:
- Preheat oven to 350 degrees. Into a large bowl, measure all the ingredients. With mixer at low speed, beat the ingredients until well mixed, occasionally scraping the bowl with spatula.
- Shape dough into two discs; wrap each with plastic wrap and refrigerate one hour (or place in the freezer for 30 minutes).
- On lightly floured surface, with lightly floured rolling pin, roll one dough disc 1/4-inch thick.
- With gingerbread man cookie cutter, cut out as many cookies as possible. With metal spatula, place cookies about 1/2-inch apart on un greased cookie sheets covered with parchment paper or a Silpat.
- Re- roll trimmings and cut again. Continue rolling and cutting with the other dough disc. Bake cookies 8 minutes or until browned. Let the cookies cool on the baking sheet for 3-4 minutes and then remove to wire racks to cool. Decorate with ornamental cookie frosting.
